Banana Bread for Brinner

Happy Hump Day y'all!

How are your week's going?  Mine is still going well, BUT, I must admit...I am EXHAUSTED and the students haven't even started coming to school yet, haha!  I apologize for being MIA in the blogworld--I'm hoping to have some time to catch up this weekend!

Today, I wanted to link up for "Meal Planning Made Easy" with Leigh at Hines-Sight Blog.  The challenge was for busy women to share recipes and help alleviate the stress of planning meals all week.  For my link-up I thought I would share one of my favorite dinnertime meals...something my dad and I named "Brinner" when I was a little girl.  Brinner is our nickname for "Breakfast for Dinner" and was always a special treat in my house.  Plus, how easy is it to make scrambled eggs and bacon?

In addition to your eggs and bacon, I have a delicious banana bread recipe to share with you.  Bryce requested that I make him banana bread and I tried this Food Network recipe last weekend and it was a huge hit!

Ingredients:

  • 1 cup granulated sugar
  • 8 tbs (1 stick) unsalted butter at room temperature
  • 2 large eggs
  • 3 ripe bananas
  • 1 tbs milk
  • 1 tsp ground cinnamon
  • 1 tsp vanilla (this was not a part of the actual recipe, but many of the reviews suggested it so I added it in!)
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda 
  • 1 tsp salt
Instructions:

1. Preheat oven to 325 F.  Butter a 9 x 5 x 3 inch loaf pan

2.Cream the butter and sugar in a large mixing bowl until light and fluffy.  Add the eggs, one at a time, beating well after each addition.

3.  In a small bowl, mash the bananas with a fork.  Mix in the milk, cinnamon, and vanilla.

4.  In another bowl, mix together the flour, baking powder, baking soda, and salt.  

5.  Add the banana mixture to the creamed mixture and stir until combined.

6.  Add dry ingredients, mixing just until flour disappears.  (I gradually added the dry ingredients, a little bit at a time, to avoid making a huge mess of flour going everywhere!)

7.  Pour batter into prepared pan and bake 1 hour to 1 hour and 10 minutes, until a toothpick entered into the center comes out clean.

8.  Set aside to cool on a rack for 15 minutes.  Remove bread from pan, invert onto rack and cool completely before slicing.

So there you have it...meal planning made easy!  Whip up this banana bread, throw some eggs and bacon on the skillet, and enjoy Brinner!
